|I know you are dying to hear about my pho chronicles. I've been loving Vietnamese Beef Noodle soup for over a decade now. Longing for it weekly. There was a time when I lived in Calgary, I could go and get it anytime the urge struck. Then while living in Toronto, I got to know all of the places on Spadina, and delighted that restaurants not only served pho but had built their business around this staple food.
Living in PEI, (this is a summary for those of you who don't know) there isn't a place to get pho anywhere. That's right not even an acceptable substitution. That is, until now.
Thai Express opened this week on Belvedere and University. They don't call this soup pho so you would never know that hidden within is this wonderous soup. In fact it's called Thai soup. But if you order it without knowing about pho you might do something crazy like get fried onions or carrots in your soup. Stay away from that. In fact, the broth is chicken broth not double boiled beef broth, but the rest is the same. Beef, rice noodle, sprouts, cilantro, basil, raw onion and sirracha sauce. (Hoisen sauce if you like it...I don't.)
After customizing my order, I sat down to have a bowl of pho that was the best bowl of pho I've had in years. It's possible that I alone will help to keep that restaurant thriving for years here. I've been waiting for over a decade, finally one of my dreams has come true.
